This is our design for a cafe that was invited to setup shop a large retail store, which was was originally a furniture shop. Set up near the entrance, this food and beverage space was anattempt to bring new activity to the entire facility.Sixty-mm square steel piping was used to partitionoff the kitchen area, creating a new frame insidethe shop space. Stopping this frame short of theceiling allowed the existing ceiling to remainunchanged, reducing any oppressive feeling thatthe kitchen space might impose on the shopinterior. In addition, fixing the pipe firmly to theexisting building structure and allowing it to actindependently allowed us to connect the kitchenand counter areas with a large opening, creating afood & beverage store that feels more open. Thestore sells bagels. Having an open kitchen allowsthe entire production process—from baking thebagels to stacking them on the counter—to bevisible, which offers peace of mind for customers. At the same time, this structural decision serves towhet their appetites for the freshly baked goods.
